Stephen Kaplan
Kaplan Farms
Foraging Edible Mushrooms

Kaplan Farms is a cottage farm in Glade Hill, VA founded by Stephen and Alexandria Kaplan in 2016. They specialize in mushroom identification, production, and cuisine. Both studied under “Mushroom Man” Skip Talifaerro and carry on that unique fun of fungi.
In 2019, Stephen created the “One-Page Field Guide” to focus on 20 specific and abundant mushrooms in our area. Instead of teaching the entirety of mushrooms from a wide field of view, the one-page creates a laser on a small list of mushrooms and wider introduction to mushroom anatomy. They are a fun family and joyful communicators not to be missed.
Emma Churchman
Author - "The Deep End of Hope in the Wake of Hurricane Helene"
THRIVING IN AN OFF-GRID WORLD

When your home, your possessions, your land, your community, your societal infrastructure, your connection to the outside world, and the people who you love are all gone in a matter of hours, what will you have left? What are you made of, without any of this? What is your identity and your role in this brave new world? We have run out of time for you to figure this out. Things are speeding up.
Emma Churchman, MDiv lived through Hurricane Helene in Western North Carolina and wrote a book about the first 40 days following the hurricane. Her keynote offers insights into how to prepare for extreme off grid living, the human experience of living grid-free, lessons learned about preparedness and the nature of community, and next steps all of us need to take in this brave new world.
Daniel Edwards
Dwell Earth
Building with Compressed Earth

Using a manual press from Dwell Earth, and partnering with my wife Meghan Edwards, we poured our life and everything we had into establishing the first Interlocking Compressed EARTH BLOCK home in Virginia, and anywhere within about 1000 miles, for what I could deduce.
We received our certificate of occupancy in 2022, lived there for 2.5 years, and currently rent the home out. Meghan put beans and rice on the table while I readied the land and built the home.
With the help of Tyler Tappin (the CEO of Freedom Design Build) I designed and engineered the home to be passive solar, bermed, and to have a buried roof. We hope to spread the use of this technology in the future.

Jakob Raven
DIY Ammunition Reloading
.jpeg)
Jake Raven recently retired from the U.S. Army after 24 years of dedicated service. Throughout his military career, he served in diverse and specialized roles, including Military Police Officer, Infantryman, Sniper, Infantry/Military Police Instructor, and Ammunition Warrant Officer (890A). His deployments included securing the Pentagon after 9/11, two tours in Afghanistan, and one tour in Iraq. At the time of his retirement, he was the State Ammunition Manager for Georgia.
In addition to his military service, Jake worked as a police officer and SWAT operator for the Savannah-Chatham Metropolitan Police Department in Savannah, GA, from 2006 to 2011. In 2011, he launched the Georgia State Marksmanship Program and served as the State Marksmanship Coordinator for 10 years. During this time, he and his teams developed comprehensive lethality programs focused on combat marksmanship, pistol and rifle proficiency, sniper training, heavy weapons tactics, anti-armor systems, range operations, and less-lethal munitions. His mission was to ensure training was relevant, engaging, and adaptable to individual needs.
Jake discovered reloading in 2008 when he began competing in long-range shooting events. What started as a way to save money on competition-grade ammunition quickly grew into a deep passion. He enjoys creating custom ammunition recipes for unique or obsolete cartridges, fine-tuning rifles for optimal accuracy, and pairing precision ammunition with specific firearms. While he currently focuses on pistol competitions, including steel challenges and combat shooting, he is eager to return to long-range rifle marksmanship.
In 2021, Jake and his family moved to Callaway, VA. He has been married to his wife for 13 years, a teacher at Callaway Elementary School, and together they are raising four children—three boys and one girl. The family is working toward establishing a self-sustaining, eco-friendly farm, with plans to produce chicken, rabbits, honey, fruit, and vegetables within the next three years.
With extensive experience in marksmanship, reloading, and instruction, Jake brings a wealth of knowledge and a passion for teaching to his ammunition reloading classes. Whether students are beginners or experienced reloaders, his goal is to make the process approachable, enjoyable, and tailored to individual learning needs.
Stacy Young
Younge Shiitake Mushroom Farm
DIY MUSHROOM-LOG FARMING

Stacy Young is the owner/operator of Young Shiitake Mushroom Farm based in Wirtz, VA. Stacy and his family started Young Shiitake in 2020, but their journey began much earlier. Their inspiration to start their own farm came through strong family ties in mushroom log- farming that goes back decades. In the mid 80's Stacy's family started Two Oak Shiitake and began growing and selling log grown shiitake mushrooms in Virginia. Young Shiitake's mission is to serve the community by sharing their knowledge and experience with others through live demonstrations, classes, and supplying quality products such as pre-inoculated mushroom logs, fresh and dried mushrooms, and mushroom seasoning powders.
Mushroom log-farming is a great way to diversify your farms or operations by producing fresh mushrooms. Cultivating mushrooms on natural logs is an excellent long-term method for mushroom production and a great addition to your homestead or garden. If you're wondering where to begin with your mushroom log journey, then join us on May 31 at the Southwest Virginia Alternative Living Expo in Ferrum, VA. We'll be discussing and giving a demonstration on mushroom log inoculation and answering any question on how to start your own mushroom-log farm.
